Vegan Pasta Salad!

Ingredients:

1 cup pasta (any short pasta works)

1/3 cup parsley or cilantro, chopped

1/2 cup black olives

1/2 cup chickpeas (you can also use Lima beans if you don't have chickpeas)

1/2 cup chopped onion (red or white, doesn't matter)

1/2 cup cherry tomatoes, cut into halves

A pinch of salt and pepper (for taste)


Directions:

1. Cook the pasta according to directions on the package.

2. While the pasta is cooking, cook/prepare the veggies.

3. When the pasta is done cooking drain.

4. Put the veggies and pasta into a large bowl and mix well

5. You can also put some dressing like some berry dressing would do well.

6. ENJOY!!
